When The Renaissance Man and I go to Costco, inevitably something ends up in our cart that wasn’t on the list. Last summer it was the biggest box of Bisquick know to man! ha!

So what do you do when you have a huge box of Bisquick and it’s strawberry season? You make Strawberry Shortcake! I picked up some ripe juicy strawberries at the Newberg Farmer’s Market, and did my best not to eat too many straight from the hallock so that we’d have enough for the main event. Such a test of will!
The nice part about making strawberry shortcake with Bisquick is that it’s super simple, just follow the instructions on the box. Before you know it, everything is done and ready to go into the oven.
I’m still learning how to use our gas oven, so the shortcake got a little “crispy” a.k.a “charcoal black” on the bottom. I know the recipe on the box says to cook at 425°F for 10-12 minutes, but I think next time I’ll 350°F and cook over a longer period. 425°F just seems too hot for baking, if anyone has any advice let me know!
We let the shortcake cool down for a bit and then it was time to eat! The strawberries were delicious, the first strawberries of the season are always the best. You may be wondering about our topping, I’ve never been a big fan of whipped cream, so instead I opt for balsamic glaze.
The Renaissance Man use to make batches of balsamic glaze for me, but the poor guy was always glued to the stove making sure it didn’t burn. I then found out from a friend that Trader Joe’s sells Balsamic Glaze in a bottle, total genius! Let the strawberry season begin!
